Bhajani Thalipeeth is a popular snack from Maharashtra. Maharashtrian Thalipeeth Recipe is served with home made butter or ghee or yogurt. As Wikipedia says, Thalipeeth is a type of savory multi-grain pancake popular in Western India. It is a special Maharashtrian dish.It is completely true.

If you go to any maharashtrian restaurant, the first thing you will notice thalipeeth.Many more maharashtrian menu items will also be there like, Misal Pav, Pithal, Sabudana Khichdi, Kadhi, Puran Poli and much more.Bhajani is a term used for dry roasted multi grain flour. It is a mix of Millet flour, rice flour, split Bengal gram flour, sorghum flour, split black gram flour and a hint of coriander seeds.

Breakfast is one of the most important meals of the day.I always prefer heavy and healthy breakfast. A thalipeeth is like a roti/a paratha but way healthier. It is made from different pulses and is rich in proteins and carbohydrates.I prefer it with butter or ghee and eat it just like this.Some can have little pickle or curd on the side.

Ingredients
1 cup bhajani
1/2 cup finely chopped onion
1/4 cup chopped coriander leaves
1 tbsp sesame seeds
1/4 tbsp turmeric powder
1/2 tbsp red chilly powder
3/4 tbsp salt
water for kneading the dough
oil for shallow frying

Preparation
1. Take bhajani floor on a large plate.
2.Put salt, red chilly powder, turmeric powder, sesame seeds, chopped onion and coriander leaves. Combine everything well.
3. Knead a soft dough with water and make 2 1/2″-3″ equal balls. 4. Take a thick plastic paper or thick cotton Cloth. Fold into half width-wise.5.Apply little water. Place one dough ball on it.Put water on your fingers and press with fingers to make a medium circle. You can also roll to required thickness.5.If the edges are cracking, adjust with fingers. And put small holes with one finger in the center on rolled thalipeeth, as in pictures.6.Heat pan/tawa, add some oil and put rolled Thalipeeth carefully from the cloth on pan/Tawa. Also, put some oil drops from holes to cook evenly from middle also.7.Turn thalipeeth and let it roast from another side.8.Serve hot thalipeeth with ghee or butter.

I always use iron tawa for roasting thalipeeth.But to make oil free, you can use a nonstick pan. Maharashtrian Thalipeeth Recipe varies with different ingredients like some use green chili and more vegetables.Even Bhajani/flour ingredient also varies from region to region.But the basic healthy concept remains same throughout.So all my diet friends can try this.I have attended one of nutritionist lecture and she was speaking about how thalipeeth is a healthy breakfast dish.Please try this and give me feedback.
