Shevai or Seviyan or vermicelli Kheer is a traditional popular dessert, made on all special occasions like birthdays, anniversaries or festivals in India. Kheer is special dessert in Indian meals and Rice kheer or Shevai Kheer are the most popular versions of Kheer.

The coarsely ground or whole grains are cooked in whole milk with sugar to the consistency of a thick soup. Nuts, and raisins may be added. The result is a creamy dessert. In South India, Kheer is called ‘Payasam’

Shevai Kheer/ Sevai Kheer/Vermicelli Kheer/Seviyan Payasam is Simple, sweet and quick to make.This creamy Sevai kheer is delicately flavored with cardamom and full of dry fruits and kesar. It can be made with condensed milk, but I prefer our traditional method of using milk and sugar.

In traditional preparation, it is always boiled wit milk and milk is thickened and sugar or Jaggery added for sweetness.This is the very simple and basic recipe for Shevai Kheer.

Seviyan or Shevai or Vermicelli is very thin long strings that looks very much like spaghetti.These are lightly roasted in ghee till they become golden in color and then milk ,sugar gets added into it.

In our home, it is always prepared on my birthday as I am a sweet lover and great fan of Shevai Kheer. I like to have it with hot Puris. It is one of the feast menu on any special occasions.

We prefer using full fat milk as it gives nice thickness to Kheer. I like to add Kesar infused milk and love that golden color which Kesar gives to Kheer.

I make many kinds of Kheer including Dates Kheer,Rice Kheer,Mango Kheer and Gavhachi Kheer (specially on Nagpanchami).Carrot Kheer , I made when my kids are small.I always used Jaggery in it.For Vrat and Upwas days also, I make Sweet Potato means Ratalyachi Kheer as well as Sabudana Kheer.

We can always have it hot or cold , garnished with dry fruits .Enjoy your Kheer Day !!!

Shevai Kheer

Seviyan or vermicelli kheer, is Indian traditional popular dessert mande on all festivals or special occasions.


  • 1/4 cup Vermicelli
  • 1 tbsp pure Ghee
  • 4 cups Milk
  • 1/2 cup Sugar
  • 2 pinches of cardamom powder
  • 2 tbsp dryfruit pieces
  • 1 tbsp Charoli
  • 1/4 tsp Kesar(soaked in 2 tbsp warm milk)


  • 1.Heat a medium sized pan over low heat.
  • 2.Add Ghee and vermicelli and roast until color changes to light pinkish or golden.(Don't make flame igh, it may turn to brown)
  • 3.Add milk and bring it to boil.
  • 4.Add sugar and cardamom powder. Let the Vermicelli cook over medium low heat.
  • 5.Once milk is thickened and vermicelli are cooked nicely. turn off the heat.
  • 6.Add in dryfruits pieces like Almonds,cashews or pistacios.I ave added charoli.
  • 7.Also, mix Kesar milk into Kheer and Serve hot.
