Throughout India, Mango pickle is very famous and made in summer with many variations.
Summer time is good for pickle because of proper sunlight so pieces of Raw mango will be dried properly.In our home also, Mango pickle or Aam ka Achar or Kairiche Lonche is made during summer.I still remember the aroma while Mom used to make this.The whole house is filled with nice aroma.
I am still in process of learning this great mango pickle.But I always make Instant Raw Mango sweet and sour pickle , means Kairiche god lonche. Jaggery is used to make little sweet taste into sour Mango. Tadka of Asafetida and red chilli powder make it more tasty and yummy.
It is very instant and made within 5 minutes.It is also called as Amleche mel, Amli means Raw mango in Konkan language.Just like , Kairi in Marathi language.In season, we can make Green Mango recipe like Aam ka Panna or Kairi Panhe. I also like to make Kairichi Dal which is a tasty chutney. We can have this chutney as a side dish in our meals.
Mostly using little water, this raw mango is cooked till soft.But I don’t like eating soft.I prefer bites of raw mango , so I avoid cooking more.
I like to have sweet pickle-Kairiche god lonche, while my hubby loves to have little spicy.In that case, I just avoid adding Jaggery and put Tadka of red chili powder on Green Mango pieces. Asafetida adds great flavor to these instant Mango pickles.We can make many variations by adding different ingredients like green chili.
There is one show ‘Pickle nation’ comes on Living Foods channel.Many times I see this show and surprised to know that pickle is made from many different fruits and vegetables.It shows many different pickles with recipes that comes from different culture and background.
