What is Kurdai?
Kurdai is delicious snack just like papad and fryums. It looks like chakali. Its best use is after frying.On festivals, it is fried like papad and served. Maharashtrian feast is incomplete without accompaniments such as Papad and Kurdai. It taste very nice.
It is made from soaked wheat and its milky white extract,Gavhacha cheek, is then cooked with water to make a soft stiff dough called Ukad, which is inturn passed through a press, to get the kurdai. These are then dried and stocked.
The procedure of making is very time taking and difficult.But still there ladies like Dadi,nani,aunty from villages who makes them every summer.Very few households now make these authentic Maharshtrian dishes.
In my childhood, I have seen many times when my Grandmother , ‘Aaji’, was making.But then I did not have camera to click pictures.So, this is on my ‘To Do’ list whenever I get next chance to see making of this, I will be clicking them for my blog 😉
In cities, we can get it from grocery stores.My Grandmother still makes it in our village.Summer time is good to make this.This video shows how to make Kurdai.We can make Kurdai chi Bhaji from Kurdai, which is very simple and fast.It can easily go with Lunchbox.
Making of Kurdai
The procedure involves to soak 1-2 kg wheat in water for 3 days.Everyday we have to change water.On 4 th day, wash with clean water and grind the wheat.Strain with cloth.Keep untouched for 3-4 hours.
All skin gets removed and only white part -milky white extract,remains down. We call it as ‘cheek’ or ‘satva’ in marathi or Gavhacha Cheek- Gahu means Wheat and cheek means extract .
In vessel,boil the double water of the satva and add salt.Now slowly add cheek or satva. Keep stirring constantly till it mixed properly and looks like transparent mixture.
Cool this mixture.Insert this mixture into Presser.Make spiral shape on plastic or plate.
Sun dry it for 3-4 days.Keep in air tight jars.Summer light is good to dry it.
It is always served fried on special occasion on meal time.Specially when you have Puran Poli meals, you are always served with Kurdai and Papad.
