One of my Tiffin friendly vegetable, Kurdai chi Bhaji. Kurdai is like chakali and made from soaked wheat (Gavhacha cheek).All Maharashtrian homes have Kurdai stored for whole year.Kurdai are mostly prepared in summer time because it needs proper sunligt and once dried, we can store it for a year or more.

It is mostly fried like papad on festival or special occasion days.These are served with heavy meals like Puran Poli. We even roast on flame to just eat like that.Now a days, the process is more simple because of microwave.

My mom used to make this vegetable by soaking 3-4 Kurdai in water.Just by giving Tadka of Green cilli and curry leaves, we can make it more tasty vegetable.This is very fast and common vegetable for tiffin whenever we dont have enough veggies in refrigerator or Guest at home or dislikes of other vegetables.

Very simple and fast vegetable for Lunch , everybody will like this definitely.

Kurdai chi Bhaji

Kurdai chi Bhaji is very simple and fast vegetable made from Kurdai.Kurdai is very famous in Maharashtrian cuisine.

Ingredients

  • 4-5 Kurdai
  • 1 onion
  • 5-6 curry leavesq
  • 2-3 green chilli
  • 6-7 peanuts
  • salt to taste
  • coriander leaves to garnish

Instructions

  • 1.Soak Kurdai in warm water for 5-7 minutes.
  • 2.Heat oil in pan and add curry leaves, green chili and peanuts.
  • 3.Add chopped onion and saute till it become translucent.
  • 4.Take out soaked Kurdai and add in pan.
  • 5.Add salt as needed and stire the vegetable.
  • 6.Switch off the flame and garnish with coriander leaves.
  • Serve Kurdai chi Bhaji with Roti and pickle.
