Matkichi Usal is common curry in all Maharashtrian meals.Matki Usal means curry of sprouted moth beans.
Sprouted moth beans are very common in every Maharashtrian home.It is my family’s favorite curry. Whenever we all sit together for the meal, matki chi usal is very common curry we all love to have.
Matki means Moth beans, also called as math in Marathi. It is the general practice in our home to soak matki overnight and put it in cloth for sprouting on other days.We generally use freshly sprouted moth beans to make curry. It is one of the common vegetable lunch boxes as well.Only add little water to make thicker curry and you can carry in your lunch box as well.

It is considered a good source of protein for Vegetarian diet because those who don’t consume Eggs and meat, lentils or beans are good source of protein power for them.’Matki Usal’ is very good recipe for protein content as well as gluten free diet.

Sprouted moth beans are used for salad as well.Weighloss era demands more use of sprouts and we can many more dishes like sprout bhel, sprout salad, sprout sandwich, sprout paratha, etc,

Matki usal is very famous Maharashtrian traditional cuisine , its lentil curry made with onion, tomato and other spices.

How to make Sprouts

1.Wash 2 cups matki or moth Beans.
2.Soak matki for 5-6 hrs in 2 cups of water.
3.Drain water and put matki in cotton cloth for sprouting. It will take 7-8hrs.
4.Fresh Sprouted matki can be ready to use or can refrigerate for two days.

Matki Usal

Matki chi Usal means Maharashtrian curry of sprouted moth beans.Sprouted moth beans is very common in every maharashtrain homes and curry tastes very nice.

Ingredients

  • 1 cup Matki (Moth beans), sprouted
  • 1 Onion, chopped
  • 1tbsp Ginger Garlic paste
  • 2 tsp. Red Chili Powder
  • 2 tsp. Garam Masala
  • ½ tsp. Turmeric
  • 1 tsp. Cumin Powder
  • 1 tsp. Coriander Powder
  • 2 Tomato, chopped
  • 2-3 strands of Coriander
  • 5-7 curry leaves
  • 1/2 tsp. asafetida
  • Oil
  • Salt to taste

Instructions

  • 1.Put sprouted matki in pressure cooker and cook for only 1 whistle. (Don't overcook it ,it will lose its existence.)

  • 2.Heat oil in pan and add curry leaves, asafetida and ginger-garlic paste.
  •  
  • 3.Then add chopped onion and sauté till onion turns yellowish.
  •  
  • 4.Now add chopped tomato and cook for 2-3 minutes.
  •  
  • 5.Add all spices and mix well. Cook the mixture till it starts leaving oil from all sides.
  • 6.Add matki and now cook for 5-10 minutes. Add salt as per taste.
  •  
  • 7.Garnish with coriander.
  •  
  • 8.Serve with hot chapati or phulkas.
  • Tips:
  • If salt is added with tomatoes, tomatoes will lose water and mix it well with masala.
  •  
  • If gravy is needed, add water to the above process. You can add roasted peanut powder to give thickness to the curry.
  •
